Ak Zanj means "With Angels," a reference to the Angel's Share, the spirit stolen by thirsty angels each year, as the rum matures in barrels. Under the tropical weather of Haiti, the Angels are especially thirsty, and their share can be as high as 10 percent annually. The more they drink, the more mature and complex the rum.
